Cucumber in Vinegar Dressing (8 servings) |

Ingredients:
Preparation: In a saucepan, simmer rice vinegar, sugar substitute and light soy sauce over low heat to dissolve. leave aside to cool. Rub cucumber with 1 tbsp of salt and then wash thoroughly. later cut cucumber into paper thin round slices. Sprinkle the remaining salt over cucumber slices. Rub and toss lightly. Rinse off salt after 15 minutes and dry cucumber slices thoroughly with a clean kitchen towel. In a bowl, mix cucumber slices with vinegar, and chill for at least an hour before serving. Before serving, garnish with ginger strip. |
