Coleslaw (4 servings)

 

Ingredients:

  • 250g white cabbage, finely shedded

  • 125g carrots, thinly grated

  • 50g fresh pineapple, diced

  • 2 tbsp white vinegar

  • 1 tsp sugar substitute

  • 1/2 cup mayonnaise

 

Preparation:

In a bowl combine cabbage, carrot, vinegar and sugar substitute. Toss well and leave a side for about half an hour.

Drain excess vinegar. Add in pineapple and mayonnaise.

Toss well and serve cold.
