Celery & green Apple Salad (2 servings)

Ingredients:

  • 20g celery root

  • 2 green apples, skinned and diced

  • 5g dried apricots

  • 100g mayonnaise

  • 5ml lemon juice

  • 1 tsp honey

 

Preparation:

For dressing - mix mayonnaise, honey and lemon juice well.

Cut celery root, soak in salt water and drip dry.

Mix dressing with apple, celery root and apricots before serving.
