Shrimp with Green Papaya Salad (4 servings)

Ingredients:

  • 900g of green papaya

  • 50g long bean, sliced finely

  • 1 tomato, discard seed and slice

  • 2 tbsp dried shrimps

  • 50g peanut, toasted, skinned and coarsely chopped

  • 1 tbsp of red chopped and crushed red chili

  • 1 pips garlic, minced

  • 15g palm sugar, minced

  • 4 tbsp fish sauce

  • 5 limes juice

 

Preparation:

Soften dried shrimp in hot water for about 10 minutes. Clean and drain. Grind finely.

Pare papaya and shred into long julienne.

Combine papaya julienne, long bean, tomato in a mixing bowl and toss well.

Add in garlic, palm sugar, fish sauce and chili. Stir in lime juice and dried shrimps.

Serve garnished with peanut.
