 Weekend Cookies (35 pieces)

Ingredients:

  • 300g melted margarine

  • 270g shifted flour

  • 180g sugar substitute

  • 3 eggs

  • 1/2 tsp baking powder

  • 150g cornflakes

 

Preparation:

Mix margarine and sugar in a cake mixer till light and creamy.

Add eggs one at a time and beat till well mixed.

Add in flour, baking powder and 1/2 the cornflakes and beat at low speed.

Line baking tray with grease-proof paper .

Form mixture into 2cm in diameter and coat with cornflakes. place on baking tray 3cm apart.

Preheat oven to 180c and bake for 10 minutes until golden brown.

Remove from oven and place cookies on cooling rack. Once cool kept in airtight container.
