Fruit Cocktail (4 servings)

Ingredients:

  • 100g apple, skinned and cubed

  • 100g star-fruit, cubed

  • 2 ruby water apple, cubed

  • 100g dragon fruit, skinned and cubed

  • 1 bay leave

  • 1 small piece star anise

  • 5g cinnamon stick

  • 1/4 rind of lemon

  • 10g fresh ginger, peel and crush

  • 150ml water

  • 80g sugar substitute

 

Preparation:

Dissolve sugar substitute slowly in a saucepan for about 12 minutes until it turn into light brown caramel color.

Add in bay leave, star anise, cinnamon stick, rind of lemon, ginger and water. Bring to simmer over low heat until crystallized sugar has dissolve. Leave to cool.

Put apple, star fruit, ruby water apple and dragon fruit in a mixing bowl and strain cooled spiced syrup over. Softly mix well.

Chill well before serving.
