Yogurt Chicken Salad

Ingredients:

Dressing :

  • 150g low fat yogurt

  • 2 tsp chicken soup stock

  • 1 1/2 tbsp olive oil

  • 3 tsp mustard

  • 1/2 tsp sugar

  • 1 tsp ground pepper

 

Salad :

  • 10 small lettuce head , coarsely shredded

  • 8 cherry tomatoes

  • 2 green apples, diced

  • 1 onion, sliced

  • 1 cup grated carrot

  • 120g cooked boneless & skinless chicken breast, sliced thinly

 

Preparation:.

Combine all dressing ingredient in a bowl.

Cover combine dressing ingredient and chill in refrigerator.

Combine all salad ingredient in a plate and chill in the fridge.

Before serving, drizzle dressing over combine salad ingredient. Serve immediately.
